摘  要:本研究旨在构建可稀释型百里香酚微乳液,研究其微观结构转变及对白念珠菌的抑菌规律。通过小角X射线散射分析发现随着水稀释作用,微乳液逐渐由油包水结构(水含量0~20%)转变为双连续结构(水含量30%~60%),进而变为水包油结构(水含量70%~90%)。粒径分布结果与小角X射线散射结果吻合,其平均粒径小于10 nm。对白念珠菌的动态抑菌试验表明,油包水型百里香酚微乳液在24 h内杀死所有白念珠菌(106 cfu/mL),其双连续型能明显抑制白念珠菌的生长,然而微乳液结构转变为水包油后抑菌能力明显下降。本研究构建了食品级可稀释型百里香酚微乳液,分析其微观结构转变过程,结果发现百里香酚微乳液能够有效抑制白念珠菌的生长,为百里香酚微乳液在食品中的应用提供了新的思路。A food-grade water-dilutable microemulsion system was constructed for encapsulation of thymol. Small Angle X-ray Scattering (SAXS) and dynamic light scattering(DLS) were used to study the microstructure transition of mi- croemulsions with dilution. The dispersion phases gradually inverted from the water-in-oil phase(10%-20%) to the bicon- tinuous phase (30%-60%) and finally to the oil-in-water phase (70%-90%) along the dilution line. The particle size distributions are in good agreement with the SAXS results. The antimicrobial activities of the microemulsions are structural dependent. Microemulsions with W/O structure killed all the Candida albicans within 24 h, and that with bicontinuous structure showed effective in inhibition of Candida dbicans. However, the highly diluted microemulsions with O/W struc- ture didn't show inhibition effect of Candida a!bicans. Our work suggests the possibility of applying thymol in the pro- duction of beverages without phase separation. The formation of thymol microemulsion will provide more options for its application in food industry.
