摘 要:采用碱提醇沉的方法从仙草中提取仙草胶,用物理化学法分析了仙草胶的基本成分,用高效液相色谱法分析了仙草胶多糖的单糖组成,并以BHA为对照,分析了仙草胶的抑制猪油氧化能力。结果表明:多糖是仙草胶的最主要成分,占总质量的80.34%,仙草胶多糖中糖醛酸含量为38.3%,说明仙草多糖是一种阴离子多糖,其余61.7%为中性多糖,包括半乳糖、甘露糖、葡萄糖、阿拉伯糖、木糖、海藻糖、鼠李糖7种单糖;体外抗氧化试验表明,仙草胶对猪油的氧化有明显的抑制作用,作用效果与BHA相当。Using alkaline extraction and ethanol precipitation methods, hsian-tsao gum(HG) was extracted from Hsian-tsao. The main components of HG were investigated through physical and chemical methods, the main monosaccharide omposition of HG was determinated by HPLC, and the antioxidant activities of HG were studied by titration method. The results indicated that polysaccharide was the major composition(accounting 80.34%), and the glucuronic acid contained 38.3% of total polysaccharide, which illustrated HG turns out to be a kind of anionic polysaccharide. Neutral polysaccharide was generally a compound of galactose, mannose, glucose, arabinose, xylose, trehalose and rhamnose. As compared to the commercial antioxidants, HG showed the same inhibition of lard oxidation effect as BHA.
