摘 要:通过对来自实验室保藏及分离自西藏地区传统乳制品中的25株乳酸菌体外降胆固醇能力进行比较,筛选出一株降胆固醇能力相对较强的植物乳杆菌TD109,并通过菌落计数,测定了其在模拟消化环境中的耐受性。结果表明:植物乳杆菌TD109的胆固醇脱除率可达47.89%;在pH值为3.0的条件下处理3 h,活菌数可达10~8mL^(-1)以上;在含有1%胆盐的培养基中处理4 h后存活率可达24.06%;在7 g/100 mL的高盐浓度下,菌落总数可达到10~7 cfu/mL以上;并且能够通过胃的消化,耐受肠道环境,在人工胃液、人工肠液分别处理3 h和8 h之后,存活率分别可达13.41%和47.66%,能够顺利定植胃肠道。所以,该菌可用作降胆固醇的潜在益生菌。Lactobacillus plantarum TD109 which has relatively superior cholesterol-lowering effect was screened from 25 Lactic acid bacteria. The activity in the simulated gastrointestinal conditions ofL.plantarum TD109 was also evaluated. The results showed that the cholesterol removal rate ofL.plantarum TD109 was 47.89%. The viable counts can be up to 108 cfu/mL in pH 3.0 for 3 h. The 1% bile salt resistant rate was 24.06%. The viable counts can be up to 107 cfu/mL at sodium chloride of 7 g/100 mL. The tolerance rate in simulated gastric fluid and intestinal fluid were 13.41% and 47.66%, respectively. L.plantarum TD109 can be as the potential probiotics with cholesterol-lowering activity.
