摘  要:本文评述了生物传感技术在饮料质量安全检测领域的研究进展,阐明了饮料中化学污染物生物传感检测的原理与种类,比对分析了生物传感技术在饮料中重金属、农药残留、生物毒素等化学污染物现场快速检测中的应用,并对饮料质量安全检测中生物传感技术的应用进行了展望。As a rapid detection technique,biosensing technique has many advantages such as high sensitivity,high accuracy,and high specificity.In addition,it is characterized by simple operation,good stability and fast speed.Thus,it is applicable to rapid assay for batches of beverage.This article reviews the research progress of biosensing technology in monitoring chemical pollutants in beverages.The basic principle and categories of the biosensing for chemical contaminants in beverage has been illustrated,followed by the analysis of recent research on biosensing heavy metals,pesticide residues and biotoxin in beverages,along with its future aspect.
