摘 要:目的对宝鸡地区鱼虾中副溶血性弧菌进行定量的风险评估,为疾病预防和风险预警提供技术支撑。方法按照GB/T 4789.7-2008规定的方法,对鱼虾进行副溶血性弧菌的定性和定量检测。使用快速微生物定量风险评估(s QMRA)方法评价鱼虾中副溶血性弧菌的感染风险。结果宝鸡地区鱼虾中副溶血性弧菌的污染率为31.10%,定量结果为30.17 MPN/g。经过s QMRA分析,7~9月15岁以上人群摄食鱼虾,副溶血性弧菌引起胃肠炎的发生概率为7.99×10-5。结论宝鸡地区鱼虾中副溶血性弧菌的污染,15岁以上人群摄食后存在感染的风险。Objective To conduct a quantitative risk assessment of Vibrio parahaemolyticus in fish and shrimp in Baoji so as to provide technical support for disease prevention and risk early warning. Methods Qualitative and quantitative detection of Vibrio parahaemolyticus in fish and shrimp were carried out according to GB/T 4789. 7-2008. Rapid microbial quantitative risk assessment( s QMRA) was used to evaluate the risk of Vibrio parahaemolyticus infection in fish and shrimp. Results The contamination rate of Vibrio parahaemolyticus in fish and shrimp in Baoji Area was 31. 10%,and the quantitative result was 30. 17 MPN/g. SQMRA analysis showed that the incidence of gastroenteritis caused by Vibrio parahaemolyticus was 7. 99 × 10-5 among people over 15 years old from July to September. Conclusion Vibrio parahaemolyticus contamination in fish and shrimp in Baoji Area has the risk of infection after ingestion for people over 15 years old.
