摘 要:目的了解开封市经济新区食品致病菌污染情况,确定可能被污染的食品,提高食源性疾病的预防和控制能力。方法参照《国家食源性致病菌检测工作手册》对开封市经济新区超市、饭店、农贸市场、零售店4类监测点8类共计368份样本进行7种食源性致病菌检测。结果 8大类368份样品中43份样品检出致病菌,检出率为11.68%,不同致病菌的检出率差异具有统计学意义(χ2=8.46,P<0.05)。各类致病菌的检出率为:肉与肉制食品27.50%,速冻热制米面食品14.00%,冷冻食品6.67%,乳及乳制品11.54%,焙烤食品4.00%,婴幼儿配方食品6.67%,动物性水产品5.56%。结论检测食品均受到不同程度的食品致病菌污染,其中以肉与肉制品最为严重,在开封市经济新区蜡样芽胞杆菌在食品污染中普遍存在,引起的食源性疾病风险较高。Objective To learn Kaifeng City Economic Zone of food contamination of pathogenic bacteria to identify contaminated food may be to improve the prevention and control of foodborne diseases. Methods According to the "National Food-borne Pathogenic Bacteria Detection Manual", a total of 368 samples from 8 types of monitoring points in 4 categories of supermarkets, restaurants, farmers markets and retail outlets in Kaifeng Economic Zone were tested for 7 food-borne pathogens. Results Pathogenic bacteria were detected in 43 samples of 368 samples in 8 categories.The detection rate was 11.68 %. The detection rates of different pathogenic bacteria were statistically significant(χ^2=8.46, P〈 0.05). The detection rate of all kinds of pathogens is: 27.50 % for meat and meat products, 14.00 % for frozen and heated rice noodles, 6.67 % for frozen foods, 11.54 % for milk and milk products, 4.00 % for baked goods and 6.67 %for infant formula., Animal aquatic products 5.56 %. Conclusions Detection of food are subject to varying degrees of contamination of foodborne pathogens, of which meat and meat products are the most serious, in Kaifeng City Economic Zone, the prevalence of food-borne disease caused by Bacillus cereus.
