摘 要:香菇是一种富含蛋白质、氨基酸、碳水化合物、多酚、维生素和矿物质等营养成分的药食两用真菌,在民间素被称为"山珍"。香菇柄是香菇生产加工过程中的下脚料,除具有与香菇相同的营养物质外,纤维素含量是香菇盖中不可比拟的。结合国内外研究成果,综述香菇及香菇柄中营养成分并阐述了其含有的多糖、多酚和黄酮等的生物活性研究进展,其中着重阐述香菇多糖生物活性研究进展,并对其发展应用前景进行展望,旨在为香菇功能性食品开发、药用价值研究和资源的综合利用提供理论依据。Lentinus edodes is a kind of biuses of medicine and food which containing protein, amino acids, carbohydrates, polyphenols, lipids, vitamins and minerals. In the folklore, it is called Shan Zhen. Lentinus edodes stem was the leftover material in Lentinus edodes production and processing. In addition to having the same nutrients as Lentinus edodes, the content of cellulose was incomparable to that of Lentinus edodes. In this paper, based on the research resuhs at home and abroad, we reviewed the research progress of nutritional components of Lentinus edodes and Lentinus edodes stem and the research progress of the biological activities of polysaccharides, polyphenols and flavonoids were reviewed, the research progress of Lentinus edodes polysaccharide was emphasized, and prospected their development and application prospects. The aim was to provide theoretical basis for the development of Lentinus edodes functional food, the study of medicinal value and the comprehensive utilization of resources.
