摘 要:目的运用恒温核酸扩增(LAMP)技术,对茂名地区肉类及制品中掺假情况进行检测。方法从茂名地区市场和超市中购买牛肉和羊肉制品,提取核酸后,运用LAMP技术进行检测。结果 LAMP技术对常见的牛肉、猪肉、鸡肉、鸭肉、羊肉、驴肉的检测都有比较好的特异性,检出限为0. 23μg/ml~0. 53μg/ml(DNA),检测时间≤40 min。通过检测发现牛肉制品中主要掺假肉类是猪肉和鸡肉,羊肉制品中主要掺假肉类是猪肉和鸭肉。结论 LAMP方法具有检出限低、前处理简单、特异性好、耐用性强、检测速度快等优点,能较好地满足肉类及制品中掺假检测的要求。Objective To detect the adulteration of meat and products in Maoming using thermostatic nucleic acid amplification technology. Methods Beef and mutton products were purchased from markets and supermarkets in Maoming. Nucleic acids were extracted,and then tested using LAMP technology. Results LAMP technology showed good specificity for the detection of beef,pork,chicken,duck,lamb,and donkey. The detection limit was within 0. 23 μg/ml-0. 53 μg/ml( DNA). The detection time was ≤ 40 min. Through testing,it was found that the main adulterated meat in beef products was pork and chicken and the main adulterated meats in mutton products were pork and duck. Conclusion LAMP method has the advantages of low detection limit,simple pretreatment,good specificity,strong durability,fast detection,etc. It can meet the requirements of adulteration detection in meat and products.
