摘  要:延长果蔬的贮藏期和降低其农药残留,一直是人们十分关心的问题。本文选用壳聚糖稀土复合物作为涂膜原料对黄瓜进行涂膜处理,室温贮藏后,测定黄瓜的感官品质、失重率、硬度、叶绿素及Vc含量、过氧化物酶(POD)及多酚氧化酶(PPO)活性和毒死蜱农药的残留量。结果表明,壳聚糖稀土复合物涂膜能很好地保持黄瓜的外观、质地和营养成分,具有明显的保鲜效果,可延长保藏期大约3 d;对毒死蜱农药降解率可达73%以上。How to prolong the shelf-life of vegetables and fruit's and degrade chlorpyrifos has been a long-time concern.Cucumbers were soaked in a solution of complex of chitosan and rare earth elements to form a coating on their surfaces.The coated cucumbers were stored at room temperature to study the preservation effect.The sensory evaluation,the rates of weight loss and firmness loss,the contents of chlorophyll and Vc,the activities of POD and PPO and the degradation of chlorpyrifos were measured.The results showed that the complex could prolong the cucumber's shelf-life effectively and degrade chlorpyrifos significanty.The degradation could be above 73%.
