摘　　要：左旋肉碱是动物体内与脂肪代谢有关的化合物,它的主要功能是作为载体将长链脂肪酸从线粒体膜外运送到膜内促进脂肪酸的氧化。本文综述了左旋肉碱的理化特性、生物合成、生理功能及其在食品工业中的应用。L - carnitine is a compound in animal' s body which relates to fatty acids metabolism. Its main function is as a carrier in the transportation of long - chain fatty acids over the mitochondrial inner membrane where it promotes fatty acids β - oxidation. The physical and chemical properties,biosynthesis,physiological functions and its application in food industry of L- carnitine are summarized in this article.
