摘 要:为探讨分光光度法用于食品蛋白质二硫键含量测定的应用方法及价值,以豆浆为研究对象,分别对其进行处理后用分光光度法测试。结果表明,豆浆样品体积与游离巯基的吸光度表现为较好的线性关系,y=0.168 2x,r2=0.996;样品体积与总巯基含量的吸光度表现为正比,y=0.288 8x,r2=0.998;样品中二硫键含量为8.886μmol/g。由此表明,分光光度法在不同食品蛋白质二硫键含量测定中均具有较好的应用效果。To explore the application method and value of Spectrophotometry for determination of two sulfur bond in food protein, soybean milk as the research object, the test was carried out by spectrophotometry after treatment. The result showed taht the volume of soybean milk sample and the absorbance of free thiol group showed a good linear relationship, y=0.168 2x, r2=0.996; The sample volume was proportional to the total content of the thiol group, y=0.288 8x, r2=0.998; The content of two sulfur in the sample was 8.886 μmol/g.It indicated that the spectrophotometric method has a good effect on the determination of the two sulfur bond in different food proteins.
