摘　　要：大豆芽营养丰富,具有很高的食用价值,将其制作成粉可长期贮存。介绍喷雾干燥技术的原理、优缺点及应用情况,阐述喷雾干燥技术生产豆芽粉的重要意义,旨在为大豆芽的深加工及提高其附加值提供一定的理论依据。Soybean sprout with high edible value is full of nutriments,and it can be kept for long if made to power.This paper introduced the principle,advantages and disadvantages and the application of spray drying technology,expounded the significance of soybean sprout power production by spray drying technology.The purpose is to provide theoretical reference for soybean sprout deep processing and increasing its additional value.
