摘 要:分析了重庆市春、冬马铃薯主产区52个马铃薯样品中的还原糖、淀粉、干物质和蛋白质含量指标及加工适宜性。结果表明,春马铃薯的平均还原糖含量为0.10%~0.23%,淀粉含量为11.41%~13.11%,干物质含量为16.04%~19.61%,蛋白质含量为1.53%~2.20%;冬马铃薯的平均还原糖含量为0.55%~0.95%,淀粉含量为8.16%~13.55%,干物质含量为17.60%~21.32%,蛋白质含量为1.94%~2.30%。仅少部分品种可作为薯片加工品种,全粉和淀粉加工等级品欠缺。未来应加快马铃薯专用品种的选育与推广,开展特色专用型马铃薯生产和产品开发。Reducing sugar,starch,diy m atter,protein content and process suitability in52potato samples from the main spring and winter potato in Chongqing municipality were analyzed in this study.The results showed that the average reducing sugar content of spring and winter potato samples ranged from0.10%~0.23%and0.55%~0.95%,the average starch content ranged from11.41%~13.11%and8.16%~13.55%,the diy matter content ranged from16.04%~19.61%and17.6%~21.32%,the protein content ranged from1.53%~2.20%and1.94%~2.30%respectively.Among them,few kinds of potato samples were suitable for the chip processing,while none of them were suitable of the granule and starch processing.The breeding and generalize of dedicated potato variety,and the development of dedicated potato products could be the important research area in the future.
