摘 要:为提高豫中烟叶烘烤质量,以中烟100为材料在豫中4个产区进行烘烤交叉试验,研究烘烤工艺对不同产地烟叶质量的影响。结果表明:4个不同产区烘烤工艺在变黄中后期和定色期存在明显差异。从产地因素来看,宝丰产烟叶烤后外观油分较多、色度浓,钾含量及钾氯比最高,感官评吸香气质、香气量两指标表现最好,整体表现最优。从工艺因素来看,中温中湿变黄、中湿定色工艺处理烤后烟叶外观油分多、色度浓,两糖含量较高,感官评吸香气质较好、香气量较足,整体表现最佳。综合来看,不同产地烟叶由于鲜烟素质不同致使烤后烟叶质量存在明显差异,针对不同产区鲜烟素质配套合理的烘烤工艺,是提高烟叶烘烤质量、彰显浓香型质量风格的重要保障。In order to improve the quality of flue-cured tobacco leaves in central Henan Province,Zhongyan-100was used as a material for cross roasting experiments in four regions of central Henan Province,and the effect of baking technology on the quality of tobacco leaves in different habitats was studied.The results showed that there were obvious differences in the middle and late stage of yellowing and the period of color fixing in the4different producing areas.From the origin factors,the appearance of oil in Baofeng tobacco leaves was more,the color was thicker,the potassium content and the ratio of potassium to chlorine were the highest.The two indexes of sensory evaluation aroma quality and aroma content were the best,and the overall performance was the best.From the process point of view,the temperature wet yellowing and color processing technology in wet set flue-cured tobacco appearance of oil and more concentrated color,high sugar content of two,the sensory better aroma quality,aroma volume,the best overall performance.In a comprehensive view,the quality of tobacco leaves in different habitats has obvious differences due to the different quality of fresh tobacco.Therefore,it is an important guarantee for improving the quality of tobacco baking and showing the quality style of the Luzhou flavor.
