摘 要:固态速溶茶和茶多酚是最为常见的两种茶制品,文章以这两种茶制品为研究对象,开展了茶制品近红外光谱指纹图谱研究。结果表明,通过与不同类别样品近红外平均光谱相似度比较,可实现固态速溶茶种类和茶多酚质量等级的归属判别,其中固态速溶茶和茶多酚的外部验证判别率分别为76.9%和84.6%,对红、绿速溶茶分类的外部验证判别率可达100%。结合主成分分析和Fisher判别分析,对固体速溶茶种类判别的回代验证总判别率为79.4%,交叉验证总判别率为69.1%,而对茶多酚制品质量等级判别的回代验证总判别率为89.7%,交叉验证总判别率为83.3%。Solid instant tea and tea polyphenols are two common types of tea products,which were the focus of the study in this paper.By applying NIR finger-print specturm,it found that identification of the variety of solid instant tea and quality grade of tea polyphenols could be realized according to similarity comparison of average fingerprint.The outer recognition accuracy of solid instant tea and tea polyphenols were 76.9%and 84.6%respectively,and the outer recognition accuracy of instant black tea and instant green tea is 100%.According to NIR spectrum,combined with factor analysis and Fisher discriminant analysis,recognition accuracy of back substitution of instant tea was 79.4%and recognition accuracy of cross validation was 69.1%.Recognition accuracy of back substitution of tea polyphenols was 89.7%,meanwhile,recognition accuracy of cross validation was 83.3%.
