摘  要:以液体糖(全蔗糖糖浆)为研究对象,探究比对其还原糖含量的3种检测方法,即兰-艾农恒容滴定法、高效液相色谱示差法及离子色谱仪测定法间的优缺点。试验结果表明,兰-艾农恒容法平行滴定试样结果的相对平均偏差为9.02%,符合行业标准规定,但其滴定操作繁琐,造成操作误差的几率大;高效液相色谱示差法因无法清晰识别出还原糖峰位导致测量结果存在较大的误差,所以不适用于液体糖(全蔗糖糖浆)中还原糖含量的检测;离子色谱法较前两种方法,具有操作简单,清晰判断还原糖峰位,结果精确度高、重复性好的优势,因而适用于液体糖(全蔗糖糖浆)中还原糖含量的检测。Liquid sugar was studied in this article,the advantages and disadvantages among these detection methods on the reducing sugar content in liquid sugar were explored and compared.These detection methods included Lane-Eynon constant volume method,HPLC method and ion chromatograph method.The results showed that:the average relative deviation of the Lane-Eynon constant volume method was 9.02%,accord with local standards,but with great operation error because of the complex operation;The peak position of reducing sugar could not be clearly identified with the HPLC method,which caused great errors on the results,so that it's not suitable for detection of reducing sugar content in liquid sugar.Compared with the former two detection methods,ion chromatography method has the advantages of simple operation,clear identification of the peak,high accuracy and good repeatability of results,and it's suitable for detection of reducing sugar content in liquid sugar.
