摘　　要：研究微波辅助提取黑米中黑色素工艺。试验最佳工艺为提取温度70℃、乙醇溶液70%、微波功率320 W、微波辐照时间120s、料液比1∶25(g/m L),微波辅助提取提高了黑米中黑色素的得率且操作时间短、节省试剂用量、污染小、安全。The technology of microwave assisted extraction of melanin from black rice was studied.The optimum extraction conditions were as follows:extraction temperature 70℃,ethanol solution 70%,microwave power 320 W,microwave irradiation time 120 s,ratio of material to liquid 1∶25(g/mL),microwave-assisted extraction improved the yield of melanin in black rice,shortened the operation time,saved the amount of reagents,less pollution and safety.
