摘 要:目的:测定不同蔬菜品种的木聚糖含量,分析不同蔬菜品种木聚糖含量的差异,为蔬菜高值化加工及人们对蔬菜木聚糖膳食纤维精准补充提供科学依据。方法:以南方常见41个蔬菜品种为研究对象,采用稀酸水解、高效液相色谱法测定蔬菜木聚糖的含量。结果:不同蔬菜品种木聚糖的含量差异显著,41种蔬菜品种中,每100g新鲜原料木聚糖含量排名前3的分别是豌豆(2. 37g)、蚕豆(2. 19g)、甜玉米(1. 86g),其他蔬菜品种木聚糖含量均小于1. 6g。根据食用器官蔬菜木聚糖含量平均值排序:花菜类>果菜类>茎菜类>食用菌类>根菜类>叶菜类。结论:补充蔬菜木聚糖膳食纤维,优选果菜类中的豆类。[Objective]To determine and compare the contents of xylan in different varieties of vegetables,to provide scientific basis for the high value processing of vegetables and the precise supplement of dietary fiber in the xylan of vegetables.[Method]We took 41 common varieties of vegetable in the south as the research objects,which were hydrolyzed by dilute sulfuric acid,and xylose in vegetable hydrolysates was measured by HPLC.[Result]There was significant differences in the xylan content in different varieties of vegetables.Among the 41 varieties of vegetables,the xylan content of vegetables in the per 100g,the xylan content in No.1 was the pea seed,which was 2.37g.The second was the row bean,its xylan content was 2.19g.The three was the sweet corn in 1.86g,and the other vegetable varieties was less than 1.60g.According to the average value of xylan content in different vegetable types,sorting the average xylan content in different vegetable types were cauliflower,fruits vegetables,stem vegetables,edible fungi,royal vegetables,leaf vegetables as follows.[Conclusion]In order to supplement more xylan dietary fiber of vegetable,the best choice was beans in fruits vegetables.
