摘  要:相对密度是评价乳品质量的一个重要理化指标,同时对奶牛的饲养有一定的指导意义,但是,GB 5413.33-2010《食品安全国家标准生乳相对密度的测定》在2017年3月1日被GB 5009.2-2016《食品安全国家标准食品相对密度的测定》代替,而代替的新标准以及我国现行有效的相对密度的相关标准并不适应于乳品中相对密度的检测。本文对我国及世界主要国家乳品相对密度的定义、要求以及检测方法进行比较,以期使我国乳品相对密度的相关标准更加完善,为我国乳品质量安全提供可靠保证。Relative density is an important physical and chemical index to evaluate dairy quality, and it also is meaningful to guide the feeding of dairy cows. However, GB 5413.33-2010 "National food safety standard Determination of specific gravity in raw milk", was replaced by GB 5009.2-2016 "National food safety standard Determination of specific gravity in food" on March 1, 2017. Moreover, the new standard as well as being using valid standard are not suitable for the detection of dairy relative density. Accordingly, by comparing the differences of dairy relative density between China and major countries in definitions, requirements and detection methods, we hope that those can help to make the standards of dairy relative density more perfect, and provide reliable guarantee for dairy quality and safety in our country.
