摘  要:马铃薯全粉作为很重要的马铃薯深加工产品,是世界公认的全价营养食品。马铃薯全粉主要作为原辅材料加工制作马铃薯方便食品,是其他食品深加工的基础,在方便食品、速冻食品、调理食品等的加工制造过程中有着广泛的应用。马铃薯全粉行业在我国起步较晚,但近几年发展迅速。概述近几年国内马铃薯全粉应用、加工技术的研究进展,以及对全粉行业的分析和展望。As a very important potato processing product,dehydrated potato granules and flakes powder is widely recognized as a nutritious food in the world. Dehydrated potato granules and flakes powder is mainly used as the raw and auxiliary material to produce potato convenience food. It is the basis of other food processing. It is widely used in the processing and manufacturing process of convenient food,quick frozen food and conditioning food. Its industry started late in China,but it has developed rapidly in recent years. The application of dehydrated potato granules and flakes powder and its processing technology in recent years were summarized,as well as the analysis and prospect for its industry.
