摘 要:通过紫外可见吸收光谱法探究了吐温80对姜黄素和姜黄素/β-葡聚糖复合物溶解性和稳定性的影响,同时通过激光粒度仪确定了复合物形成的超分子聚集体及其粒径变化,并利用X-射线衍射和红外光谱研究了姜黄素与β-葡聚糖结合前后结构的变化.结果表明:姜黄素在吐温80乙醇溶液中比在乙醇溶液的溶解性和稳定性都好,通过X-射线衍射和红外光谱从一定程度上证实了姜黄素与燕麦β-葡聚糖只是物理结合,通过动态光散射粒径测定吐温80可以促进姜黄素和β-葡聚糖的分散.The UV-Vis absorption spectroscopy method is used to study the dissolution of curcumin and curcumin/β-glucan complex by Tween 80.The effects of properties and stability,and the supramolecular aggregates formed by the complexes and their particle size changes were determined by laser particle size analyzer.Curcumin and β-glucan were studied by X-ray diffraction and infrared spectroscopy.After combining changes in the structure before and after,the results showed that the solubility and stability of curcumin in Tween 80 ethanol solution was better than that in ethanol solution.There was no change in the effect of spectrum both in absorbance and shift of the wavelength,respectively.X-ray diffraction and infrared spectroscopy,to some extent,confirmed that curcumin and oat β-glucan are only physically bound.Particle size measurement showed that Tween 80 promoted the dispersion of curcumin and β-glucan.
