摘  要:通过采用化学分析法,对溶剂提取和超临界CO2提取的番茄红素油树脂进行成分分析。并通过测定这2种提取方法提取的番茄红素油树脂的抗氧化能力,对氧自由基、羟基自由基的清除能力,来评价其抗氧化活性。结果显示:这2种方法提取的番茄红素油树脂均含有多糖、苷类、有机酸、皂苷、黄酮类、酚类、鞣质、挥发油。除此之外,超临界CO2提取的番茄红素油树脂中还含有还原糖、强心苷、甾体类、香豆素及内酯。体外抗氧化试验表明:2种不同提取方法提取的番茄红素油树脂对氧自由基、羟基自由基有较强的清除能力,表现出很强的抗氧化活性。在相同番茄红素油树脂质量浓度下,超临界CO2提取清除能力优于溶剂提取。Lycopene oleoresih extracted by solvent extraction and supercritical CO2 extraction were identi fied by chemical reaction method.The antioxidant activities of the solvent extracted and supercritical CO2 extracted lycopene oleoresin were evaluated in vitro by oxygen free radical,hydroxyl free radical,reducing power,respectively.The results indicated that polysaccharides,glycosides,organic acids,saponins,flavonoids,phenols,naphtha were both obtained.In addition,reducing sugar,cardiac glycoside,nonsteroidal,coumarin and lactone of supercritical CO2 extracted lycopene oleoresin were also obtained.In vitro antioxidant tests showed that two kinds of extraction method both had a strong antioxidant activity.At the same lycopene oleoresin concentration,scavenging capacity was supercritical CO2 extraction better than solvent extraction.
