摘  要:目的了解平顶山市食品细菌性污染现状,为政府开展食源性疾病防控提供数据支持。方法2013年-2017年采集平顶山市食品852份,对834份样品进行阪崎肠杆菌、单核细胞增生李斯特菌等11种食源性致病菌检测,对434份样品进行大肠菌群计数和菌落总数卫生指示菌检测。结果食源性致病菌总检出率为4.56%,肉及肉制品致病菌总检出率最高,为13.89%。11种致病菌中,铜绿假单胞菌和蜡样芽胞杆菌检出率分别为7.14%和6.37%。卫生指示菌大于M值的检出率为12.21%,菌落总数和大肠菌群计数大于M值检出率分别为9.56%和6.91%。散装食品致病菌总检出率和卫生指示菌大于M值总检出率均高于预包装,差异有统计学意义(X^2值分别为10.299、8.336,P<0.01)。结论建议加强平顶山市重点食品监测和监管力度,以有效防控食源性疾病的发生。Objective To understand the current situation of bacterial contamination of food in Pingdingshan City, so as to provide data support for the government to carry out foodbome disease prevention and control. Methods 852 food samples were collected from 2013 to 2017 in Pingdingshan, 834 samples were conducted for the detection of 11 kinds of foodbome pathogens including Enterobacter sakazakii and Listeria monocytogenes, and 434 samples were conducted for the detection of hygienic indicator bacteria. Results The total detection rate of foodbome pathogen was 4.56%, and the highest detection rate was 13. 89% in meat and meat products. The detection rate of Pseudomonas aeruginosa was 7.14%, and that of Bacillus cereus was 6. 37%. The total detection rate of the number of hygienic indicator bacteria colonies > M was 12.21 %, that of bacterial colonies was 9. 56%, and that of coliforms was 6. 91 %. The detection rates of foodbome pathogen and the number of hygienic indicator bacteria colonies > M in bulk food were both higher than those of prepackaged food, and there was statistical significance on the differences between them (X^2 = 10.299, X^2 = 8.336, P < 0.01). Conclusion The strength of monitoring and management should be enhanced to prevent and control foodbome diseases.
