摘　　要：介绍了食品微生物检验中罐头食品商业无菌检验的定义、特点、工艺流程,对日常生活以及商业生产中较为常用的罐头食品商业无菌检验技术进行了研究分析,并就如何全面完善地评价商业检验结果进行了解释。This paper introduces the definition,characteristics and technological process of commercial sterility test of canned food in the food microbiology testing,analyzes the common commercial sterility test technology of canned food in daily life and commercial production,and explains how to evaluate the commercial test results comprehensively.
