摘  要:以襄阳地区青年人肠道为例,采集7名志愿者粪便样品为试材,通过鉴别培养基对其中的乳酸菌进行分离,并进一步利用16S rDNA序列分析方法进行种属鉴定,同时采用电子舌和电子鼻相结合的方法对部分乳酸菌制备发酵羊乳的品质进行了评价。结果表明:襄阳青年人肠道中乳酸菌多样性较高,共从7位青年志愿者粪便样品中分离出隶属于2个属、9个种的21株乳酸菌,且以W.confusa(融合魏斯氏菌)为主,占到分离株总数的28.57%。使用乳杆菌和W.confusa(融合魏斯氏菌)分别进行了发酵羊乳的制备;乳杆菌发酵羊乳的风味品质较佳,同时L.fermentum HBUAS54187、L.plantarum HBUAS54176和L.johnsonii HBUAS54185可作为潜在菌株,用于后续具有良好羊乳发酵特性乳酸菌的筛选。In this study, the diversity of intestinal flora in youth people of Xiangyang Hubei province was used as an example, 7 fecal samples of volunteers were collected and used for the isolation of lactic acid bacteria strains by differential medium method, and preliminary identification by 16 S rDNA. Then, the product quality of fermented goat milk samples made by these strains were evaluated by electronic tongue and electronic nose. The results showed that 21 suspected strains isolated from 7 fecal samples of youth volunteers, which divided into 2 genera and 9 species, and W. confusa was accounting for 28.57% of the isolates. The fermented goat milk samples were fermented by Lactobacillus and W. confuse strains, and samples fermented by Lactobacillus with better quality. Meanwhile, L. fermentum HBUAS54187, L. plantarum HBUAS54176 and L johnsonii HBUAS54185 could be used for screening of lactic acid bacteria with good fermentation characteristics of goat milk.
