摘  要:目的掌握连云港市市售食品中食源性致病菌污染状况,为食源性疾病的预防及控制提供科学依据。方法依据《全国食源性致病菌监测工作手册》,对全市范围内抽样采集的食品样品进行检测。结果 2012年-2017年共检测1 369份样品,样品食源性致病菌总检出率为12.34%(169/1 369),其中以副溶血性弧菌的检出率最高(27.92%,67/240),其次为铜绿假单胞菌(24.44%,22/90);不同食品类别中,水产品中致病菌检出率最高,为30.42%(73/240),豆制品、水果及制品、调味品均未检出;不同年份致病菌检出率最高的是2014年21.05%;不同包装类型的食品中,散装(包括自行简易包装)样品检出率为15.30%(142/928),高于预包装样品检出率(6.12%,27/441)。结论水产品及桶装饮用水是本市主要微生物污染食品,相关部门应对生产、餐饮及流通环节加强监管力度,同时乳及乳制品的潜在危害不容忽视。Objective To understand the contamination status of food-borne pathogens in food from Lianyungang markets, and to provide scientific basis for preventing and controlling food-borne diseases. Methods According to the Handbook of National Surveillance on Food-borne Pathogenic Bacteria, the food samples that randomly collected from the whole city were detected. Results A total of 1 369 food samples were detected from 2012 to 2017 with an overall positive rate of 12.34%(169/1 369). The positive rate of Vibrio parahemolyticus was the highest(27.92%,67/240), followed by Pseudomonas aeruginosa(24.44%,22/90);Salmonella, Listeria monocytogenes, Enterobacter sakazakii, Staphylococcus aureus and Vibrio alginolyticus were detected in different degrees. Among the different food categories, the positive rate of pathogenic bacteria in aquatic products was up to 30.42%(73/240), and no soy products, fruits and products, or flavorings were detected. The positive rate of food-borne pathogens in different years was statistically significant, with the highest positive rate of 21.05% in 2014. Among the different types of foods, the detection rate of samples in bulk(including self-simplified packaging) was 15.30%(142/928), which was higher than the pre-package detection rate of 6.12%(27/441). Conclusion Aquatic products and bottled water are the main microbial contamination foods in Lianyungang. The relevant departments should strengthen supervision over production, catering and circulation, while the potential harm of milk and dairy products should not be ignored.
