摘 要:为探讨不同时间的短波紫外线(UV-C)处理对香菇采后保鲜效果的影响,以新鲜香菇为试材,分别采用短波紫外线处理香菇0 min、5 min、10 min和15 min,然后将其在7±1℃条件下贮藏并分析其感官品质及生理生化变化。结果表明:与0 min处理组相比,3种不同时间的短波紫外线处理,对香菇保鲜品质及生理代谢的影响不同。其中5 min短波紫外线处理能显著提高香菇的感官分值,延缓多糖和维生素C的降解,抑制香菇内源甲醛含量的积累(p<0.05),对呼吸强度和可溶性固形物含量的影响差异不显著(p>0.05);而10 min和15 min短波紫外线处理,尤其是15 min短波紫外线处理,则显著降低香菇的感官分值,提高多糖、维生素C的降解速度及失重率,促进呼吸代谢及内源甲醛含量的积累(p<0.05)。表明适宜的短波紫外线处理可改善香菇的采后保鲜效果。In order to investigate the effects of UV-C radiation treatment on postharvest preservation of Lentinus edodes at different time,it were treated for 0 min,5 min,10 min and 15 min and stored in 7±1℃and analyzed its sensory quality and physiological and biochemical changes.The results showed that compared with 0 min treatment group,the three kinds of shortwave UV irradiation treatments at different times had different effects on fresh-keeping quality and physiological metabolism of Lentinus edodes.Among them,the treatment of short-wave ultraviolet radiation for 5 min could significantly increase the sensory score of Lentinus edodes,delay the degradation of polysaccharides and vitamin C,inhibit the accumulation of endogenous formaldehyde content in Lentinus edodes(p<0.05),but had no significant effect on respiration rate and soluble solids content(p>0.05).However,10 min and 15 min shortwave ultraviolet radiation treatment,especially 15 min shortwave ultraviolet radiation,significantly decreased the sensory score of Lentinus edodes,increased the rate of degradation of polysaccharides and vitamin C and the weightlessness rate,and promoted the respiration and accumulation of endogenous formaldehyde(p<0.05).It was shown that the appropriate short-wave UV treatment can improve post-harvest preservation of Lentinus edodes.
