摘  要:研究3个产地(海南、台湾、泰国)莲雾果实的总酚、总黄酮含量和抗氧化及抑制亚硝化活性,并分析其相关性。采用福林酚比色法(Folin-Ciocalteu)和Al(NO3)3络合分光光度法分别测定不同产地莲雾果实中总酚和总黄酮的含量,采用DPPH法、ABTS法和普鲁士蓝法分别测定莲雾果实的自由基清除能力和铁离子还原力,采用盐酸萘乙二胺法和α-萘胺法分别测定莲雾果实对亚硝酸盐的清除率和对亚硝胺合成的阻断率,采用相关程度分析方法对2种成分与抗氧化和抑制亚硝化作用进行相关性分析。结果显示,不同产地莲雾果实中总酚、总黄酮含量依次为:海南莲雾>台湾莲雾>泰国莲雾;海南莲雾果实的抗氧化和抑制亚硝化活性最强,并显著强于其他产地的莲雾(p<0.05),且莲雾果实抗氧化活性和抑制亚硝化活性与总酚、总黄酮含量呈极显著正相关(p<0.01)。通过对3个不同产地莲雾果实总酚和总黄酮含量的测定、抗氧化和抑制亚硝化作用评价及相关性分析,为莲雾果实品质的评价及进一步开发利用提供试验数据和参考依据。The total phenolic content,total flavonoid content,antioxidant activity,and nitrosation activity of Syzygium samarangense fruit from 3 different origins were compared and analyzed for correlation.The contents of total phenolic and total flavonoid from Syzygium samarangense fruit were determined by Folin-Ciocalteu colorimetric method and Al(NO3)3 complexation spectrophotometric method.DPPH,ABTS,and Prussian blue method were used to determine the free radical scavenging and iron reducing power of extracts from Syzygium samarangense fruit.The removal rate of nitrite and the blocking rate of nitrosamine synthesis were determined by naphthylethylenediamine hydrochloride method andα-naphthylamine method,and correlation analysis method was used to measure their relationships.The results showed that the contents of total phenols and flavonoids in Syzygium samarangense fruits from different habitats were as follows:Hainan>Taiwan>Thai.The antioxidant and nitrosation inhibitory activities of Hainan Syzygium samarangense fruits were the strongest,and were significantly stronger than those of other habitats(p<0.05).Correlation studies showed that the antioxidant activity and inhibition nitrification activity of Syzygium samarangense frui had a significant positive correlation with total phenols and total flavonoids(p<0.01).The evaluation of index components,activities,and related analysis of Syzygium samarangense fruit from 3 different origins would provide experimental data for quality evaluation and rational utilization of Syzygium samarangense fruit.
