摘　　要：本文在对水溶性、脂溶性、兼容性3种天然食品抗氧化剂来源及其抗氧化性进行分析的基础上,对天然食品抗氧化剂在食品加工及食品保健行业中的应用进行综述。Based on the analysis of water solubility, fat solubility and compatibility of three natural food antioxidants and their antioxidant properties, the application of natural food antioxidants in food processing and food health industry was reviewed.
