摘 要:目的了解联合国驻刚果(金)中国二级医院食品和食堂的卫生状况,为针对性提出食品及餐饮具卫生监测和管理的有效措施提供科学依据。方法 2018年9月-2019年1月对中国二级医院8类225份食品以及食堂4类760份餐具进行现场监督检查和样品抽样检测。结果采集的8类225份食品中,细菌总数总合格率为72.02%。食源性致病菌检出率分别为副溶血弧菌(2.74%)、蜡样芽孢杆菌(6.20%),沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌均未检出。不同食品食源性致病菌检出率分别为烘培食品(8.33%)、水产品及其制品(12.50%)、熟制米面制品(15.00%)、中式快餐(12.50%),其他几种食品均未检出。不同餐具食源性致病菌检测结果显示,餐盘、筷子、汤碗合格率显著高于菜板的合格率。结论中国二级医院食堂卫生状况较差,存在一定的安全隐患,应引起重视,加强监督。Objective To understand the hygienic conditions of food and canteens in the Chinese secondary hospitals in Democratic Republic of Congo(DRC),provide scientific evidence for putting forward effective measures of hygienic monitoring and management of food and tableware. Methods From September 2018 to January 2019,225 samples of food from eight categories and 760 samples of tableware from four categories in Chinese secondary hospitals were inspected and sampled. Results In 225 samples of food from eight categories,the total qualified of bacteria count was 72.02%. The detection rates of food-borne pathogens were as follows: 2.74%of Vibrio parahaemolyticus,6.20% of Bacillus cereus,while Salmonella,Staphylococcus aureus and Listeria monocytogenes were not detected. The detection rates of food-borne pathogens in different foods were as follows: 8.33% of baked food,12.50% of aquatic products and their products,15.00% of cooked rice and flour products,12.5% of Chinese fast food,while other foods were not detected. The results of food-borne pathogens in different tableware showed that the qualified rate of dishes,soup bowls and chopsticks was higher than that of chopping board. Conclusion The canteen of Chinese secondary hospitals has a poor sanitary condition,and there are some food safety barriers. It is necessary to pay attention and strengthen supervision.
