摘  要:豆制品历史悠久、品类众多、营养丰富,是最经济最环保的蛋白质来源,也是广大消费者日常不可或缺的食品原料,深受国内外消费者的欢迎,市场需求也稳步增长。但传统豆制品加工属于高耗水、高污染产业,直接排放带来了严重的环境问题,在新的环保政策压力下,大量的污水处理也给企业带来了沉重的经济负担。因此,污水减量化和清洁化处理技术成了豆制品产业发展的制约瓶颈。通过对豆制品污水营养成分、现有处理工艺、资源化利用现状进行综述和分析,提出了有效减量化、清洁化处理和综合利用发展方向。该研究为促进构建资源节约型、环境友好型的豆制品加工产业快速健康发展,实现清洁化、标准化、智能化和副产物有效综合利用提供了基础。Bean products have a long history,a wide variety of products,and rich in nutrients.They are the most economical and environmentally-friendly source of protein.They are also indispensable food raw materials for consumers.They are welcomed by domestic and foreign consumers,and market demand is also growing steadily.However,the processing of traditional soybean products is a high-consumption water and high-pollution industry.Direct discharge brings serious environmental problems.Under the pressure of new environmental protection policies,a large amount of sewage treatment also brings a heavy economic burden to enterprises.Therefore,sewage reduction and clean treatment technologies have become the bottleneck of the development of the soybean products industry.This paper summarized and analyzed the nutrient composition,existing treatment process and resource utilization of soybean products,and proposed the development direction of effective reduction,clean treatment and comprehensive utilization.In order to promote the rapid and healthy development of the resource-saving and environment-friendly soybean product processing industry,it provided a basis for clean,standardized,intelligent and effective comprehensive utilization of by-products.
