摘  要:目的了解北京市西城区食品中食源性致病菌的污染情况,为食品安全风险预警以及食源性疾病的预防提供依据。方法依据国家食品污染物和有害因素风险监测工作手册,食品按照分类随机采样,分别进行致病菌检测。结果2015年-2017年检测23类食品样品共计502份,致病菌总体检出率为27.69%,其中生畜(禽)肉检出率最高(71.43%);分离致病菌菌株156株,其中蜡样芽胞杆菌86株,其次为23株金黄色葡萄球菌、21株单核细胞增生李斯特菌及19株副溶血性弧菌;有17份食品样品同时检出2种致病菌。结论北京市西城区食品中存在一定程度的食源性致病菌污染,应针对致病菌检出数量高的食品类别加强食品卫生管理,防止食物中毒的发生。Objective To understand the contamination status of foodborne pathogens in food in Xicheng District, Beijing, so as to provide basis for early warning of food safety risks and prevention of food-borne diseases. Methods Food was randomly sampled by category, and pathogens were detected according to the National Food Contamination and Harmful Risk Monitoring Manual. Results From 2015 to 2017, a total of 23 categories of 502 food samples were detected, and the overall detection rate of pathogenic bacteria was 27.69%, among which the detection rate of raw animal(poultry) meat was the highest(71.43%). 156 strains of pathogenic bacteria were isolated, among which 86 strains of bacillus cereus were isolated, followed by 23 strains of Staphylococcus aureus, 21 strains of Listeria monocytogenes and 19 strains of Vibrio parahaemolyticus. Two pathogens were detected simultaneously in 17 food samples. Conclusion There is a certain degree of food-borne pathogenic bacteria contamination in food in Xicheng District, Beijing. It is necessary to strengthen the food hygiene management on the food categories with high detection of pathogenic bacteria, so as to prevent the occurrence of food poisoning.
