摘 要:厚皮甜瓜采收期比较集中,且正值夏季高温季节,加上果实含糖量较高、水分含量较大,生理代谢比较旺盛,采后若处理不当,在贮藏运输过程中易受外界病原菌侵染而发生腐烂变质,造成较大经济损失。综合国内外研究进展,分别对物理、化学、生物3个方面的保鲜技术的机理和效果进行阐述,旨在为我国采后甜瓜保鲜技术的变化和发展提供参考。Thick-skinned melon harvest period is concentrated,and honest high temperature season,plus fruit sugar content is high,water content is large,physiological metabolism is strong,if not properly treated after harvest,in the course of storage transportation,easy to leach outside pathogenic bacteria and decay,causing a lot of economic losses.Based on the research progress at home and abroad,this paper expounded the mechanism and effect of post-harvest melon preservation technology from three aspects:physical preservation technology,chemical preservation technology and biological preservation technology,in order to provide reference for the development of post-harvest melon preservation technology in China.
