摘  要:采用大孔树脂对桂东九头狮子草红色素进行纯化,并评价了红色素的稳定性。结果表明,D-101树脂对九头狮子草红色素有很好的吸附和解吸性能;所得色素溶液在低于100℃时稳定;稳定性受pH值影响,在常用中性、弱酸或弱碱性食品添加剂溶液中,色素的稳定性较好,在强酸或强碱溶液中颜色发生变化;色素的稳定性也受金属离子的影响,在Na^+、K^+、Mg^2+盐溶液中稳定,而在含有Cu^2+、Fe^3+、Al^3+的溶液中色素的稳定性差。Red pigment was pured with macroporous resin from Guidong peristrophe japonica and the stability of the red pigment was evaluated.The results showed that D-101 resin had good performance of adsorption and desorption to red pigment of peristrophe japonica.The stability of pigment solution was affected by pH value at less than 100℃,and the stability was good in commonly used neutral,weak acid or weak alkaline food additive solution.The color changed in strong acid or alkali solution.The stability of the pigment was also affected by the metal ions,good in Na^+,K^+,Mg^2+salt solution and poor in the solution containing Cu^2+,Fe^3+,Al^3+.
