摘 要:目的对一起食源性疾病暴发事件开展流行病学调查,分析事件的流行病学特点,查找原因食品、致病因子和污染来源。方法通过现场流行病学和食品卫生学调查,采集剩余食物和病人肛拭子标本开展实验室检测,分析引起中毒的可疑食物,采用脉冲场凝胶电泳(PFGE)对分离株进行同源性分析。结果此次事件共发现14例病例,主要临床表现为腹泻(14/14)、腹痛(13/14)、发热(13/14)。所有病例均食用M餐厅加工制作的鳗鱼蛋丝饭。病例便标本中检出肠炎沙门氏菌,经PFGE分子分型分析具有同源性。结论结合病例临床表现、流行病学资料和实验室检测结果,证实此次事件为一起肠炎沙门氏菌食源性疾病暴发事件。Objective To carry out epidemiological investigation on an outbreak of foodborne diseases by online meal ordering, to analyze the epidemiological characteristics of the event, and to find out the causes of food, pathogenic factors and sources of pollution. Methods Through on-site epidemiological and food hygiene investigation, residual food and anal swab samples of patients were collected for laboratory testing, and suspicious food causing poisoning was analyzed. Results A total of 14 cases were found. The main clinical manifestations were diarrhea(14/14), abdominal pain(13/14) and fever(13/14). All cases were fed with eel egg shredded rice processed in a restaurant. Salmonella enteritidis was detected in stool specimens of patients, which had homology by PFGE molecular typing analysis. Conclusion Combined with clinical manifestations, epidemiological data and laboratory result, it was confirmed that the incident was an outbreak of foodborne diseases caused by Salmonella enteritidis.
