摘 要:毕业论文作为高校本科教学过程中综合实践教学实践环节之一,作为人才培养质量评价的重要抓手,对培养学生创新意识、独立解决分析问题具有重要意义。以本科毕业论文课题"微生物多糖-微量元素螯合及其抗氧化活性"为例,以微生物多糖中的代表真菌多糖(海鲜菇多糖、杏鲍菇多糖)及微量元素锌、铁为对象,从论文选题、实验准备、实验研究和论文撰写等方面,探讨常熟理工学院食品质量与安全专业本科毕业论文课题中的应用与实践,顺利答辩完成毕业论文课题,确定了海鲜菇多糖铁(Ⅲ)螯合物、杏鲍菇多糖锌螯合物的制备工艺及其抗氧化活性,学生的分析、解决问题的能力大大提升,达到了本科毕业论文的教学目标。Graduation thesis, as one of the comprehensive practical teaching links in the undergraduate teaching process of colleges and universities, is an important measure for the evaluation of the quality of talent cultivation. It is of great significance to cultivate students’ innovative consciousness, solve and analyze problems independently. Taking the subject of the undergraduate thesis "Microbial Polysaccharides-Trace Element Chelation and Its Antioxidant Activity" as an example, the representative fungal polysaccharides(polysaccharides from hypsizygus marmoreus and pleurotus eryngii) and the trace elements zinc and iron were taken as targets Thesis topics, experimental preparation, experimental research, and thesis writing were discussed. The application and practice of the undergraduate thesis project of food quality and safety specialtry in changshu institute of technology were discussed. Students successfully finished their graduation thesis. The preparation technology and antioxidant activity of hypsizygus marmoreus polysaccharide-iron(Ⅲ) chelate and pleurotus eryngii polysaccharide-zinc were determined. Students’ ability to analyze and solve problems has been greatly improved. The teaching goal of the undergraduate thesis has been achieved.
