摘　　要：介绍了苔干食用价值及药用价值,提供了以苔干为主要原料酿酒方案,具体对生产过程中糖度的调整、酸度的调整、干酵母添加量及发窖温度控制等方面全面进行论述。The edible and medicinal values of Taigan(Lactuca sativa var.angustata)were introduced in detail.The scheme of liquor making using Taigan as the main raw material was provided.The adjustment of the sugar content and acidity,the amount of dry yeast and the control of fermentation temperature in the process were discussed thoroughly.
