摘　　要：食品加工技术实训是食品加工技术课程重要的实践环节,是引导学生在实践中解决问题、培养学生主观能动性、启发学生创造性思维的重要实施途径。PBL教学是以调动学生积极性和主动性来分析、解决问题的教学法。实践表明,PBL教学法实施灵活,课堂活跃度高,不仅可以提高学生综合运用知识的能力,还能够有效提高课堂教学效果。Food technology experiment is the most important practical link in food processing technology course,and it is an important way to guide students to solve problems in practice,cultivate students'subjective initiative and inspire students'creative thinking.PBL is a teaching method that mobilizes students'enthusiasm and initiative to analyze and solve problems.Practice showed that PBL teaching method was more flexible and the classroom activity was improved,which not only improved students'ability to comprehensively apply knowledge,but also effectively improved the classroom teaching effect.
