摘  要:为提升大黄鱼鱼卵磷脂的利用水平,以大黄鱼鱼卵磷脂和酪蛋白为原料,建立大黄鱼鱼卵磷脂-酪蛋白复合体系,利用低温喷雾干燥法制备了大黄鱼鱼卵磷脂-酪蛋白固态基料,并对其理化特性进行研究。在单因素试验基础上,选定乳化活性为指标进行响应面分析,并对优化条件下制得粉末的水分含量、休止角、堆积密度、溶解性、过氧化值及微观结构等进行表征。结果表明,当大黄鱼鱼卵磷脂与酪蛋白体积比为1∶2,均质压力为600 bar(60 MPa),油相体积为6 m L时,可得乳化活性指数为49.49 m2/g的复合体系;在该条件下制得的固态基料呈淡黄色、颗粒小、分散均匀、水复溶性好,水分含量为1.3%,休止角33.57°,堆密度0.769 g/cm3,溶解性47.56%,过氧化值1.65 mmo L/kg,扫描电镜显示固态基料结构致密、无孔隙、近球形、略有凹陷、粒径大小为5~20μm。To enhance the utility of large yellow croaker roe phospholipids,the large yellow croaker roe phospholipids-casein composite emulsion system was obtained by using casein and roe phospholipids as materials.The large yellow croaker roe phospholipids-casein composite powder was prepared by low-temperature spray-drying method,and its physical and chemical properties were studied.Based on single factor experiments,the emulsifying activity was selected as the index to analyze the composite system by response surface.The moisture content,repose angle,bulk density,solubility,peroxide value and microstructure of the powder prepared under the optimized conditions were characterized.The results showed that when the volume ratio of phospholipids of large yellow croaker roe to casein was 1∶2,the homogenization pressure 600 bar(60 MPa),and the volume of oil phase 6 mL,the composite system with emulsifying activity index of 49.49 m2/g can be obtained.The powder prepared under this conditions was light yellow,and had the advantages of small particles,uniform dispersion and good water resolubility.The water content was 1.3%,the angle of repose was 33.57°,the bulk density was 0.769g/cm3,the solubility was 47.56%,and the peroxide value was 1.65 mmol/kg.Scanning electron microscope showed that the powder structure was dense,non-porous,nearly spherical,slightly concave,and the particle size ranged from 5~20μm.
