摘  要:以香芋皮为原料,采用超声法提取水溶性膳食纤维(SDF),并通过红外光谱、扫描电子显微镜、X射线衍射及热重分析其结构。结果表明,超声法提取SDF条件为:料液比1︰40(g/mL)、超声时间30 min、反应温度50℃、反应pH 4.0,此条件下SDF提取率可达6.0%。试验得到的SDF其持水性和持油性较好,具有不规则片状结构,为纤维素Ⅰ型,热稳定性良好。Peel taro was used as raw material to inspect the process condition of preparing soluble dietary fiber(SDF)by ultrasonic-assisted methods.The structure of SDF was characterized by IR,XRD,SEM and TGA.The results showed that the optimum extraction condition was ratio of 1︰40(g/mL),extraction time of 30 min,extraction temperature of 50℃,pH of 4.0.Under this condition,the peel taro soluble dietary fiber was up to 6.0%.The SDF had good water-holding capacity and oil-holding capacity.SDF had irregular sheet structure.It was cellulose typeⅠSDF with thermodynamically stable.
