摘  要:目的了解一起食堂就餐引起食源性疾病暴发事件的原因。方法收集2019年9月2日A景区职工及其家属中疑似病例的发病时间、临床症状、就餐情况等信息,并对就诊患者进行实验室指标检测。对食物样本进行成分定性检测。结果共收集病例29例,发生率为96.7%(29/30),临床表现以腹泻(27例,93.1%)、呕吐(26例,89.7%)、恶心(20例,69.0%)和腹痛(14例,48.3%)为主,实验室中血常规中性粒细胞百分比和白细胞升高(15/19)、尿常规异常(8/13)、肝功能各指标升高(11/18)。9月2日午餐的炒青菜为危险食品,1份剩余烹调油样本的检测结果为桐油。结论本次事件确定为一起误将桐油作为烹调油的食源性疾病暴发事件。Objective To investigate the cause of an outbreak of foodborne disease in canteen.Methods Information about onset time,clinical features and dining of suspected cases among employees and their family members on September 2,2019 in scenic area A was collected.Laboratory indexes were detected in patients and food ingredients were qualitatively analyzed.Results There were 29 cases identified with the incidence rate of 96.7%(29/30)among staff and their families in scenic area A.The clinical manifestations were mainly diarrhea(27 cases,93.1%),vomiting(26 cases,89.7%),nausea(20 cases,69.0%)and abdominal pain(14 cases,48.3%).Blood routine test results showed the increase of neutrophils percentage and white blood cells(15/19),abnormal urine routine(8/13),and increased liver function indexes(11/18).The fried green vegetables for lunch on September 2 were dangerous foods.The test result of one remaining sample of the cooking oil was tung oil.Conclusions This is a foodborne outbreak caused by tung oil which is misused as cooking oil.
