摘  要:目的:建立超高效液相色谱-四极杆/静电场轨道阱高分辨质谱法快速分析肉制品中28种合成着色剂的方法。方法:样品经乙腈和乙酸乙酯提取、净化后,经色谱柱分离,流动相梯度洗脱。在正、负离子切换模式下测定28种合成着色剂;通过28种合成着色剂的保留时间和一级母离子精确质量数以及同位素丰度比,实现对28种合成着色剂的快速测定;以二级碎片离子精确质量数进行确证。结果:目标物线性关系良好,相关系数大于0.99;方法检出限为2.5~500μg/kg;回收率73.5%~109.2%,相对标准偏差4.9%~10.0%。结论:该方法简单、快速、可靠,适用于肉制品中28种合成着色剂的定性筛查和定量分析。Objective:To develop a rapid and simple method for the quantification of 28 kinds of synthetic colorant in meat product by ultra performance liquid chromatography quadrupole electrostatic field obitrap high resolution mass spectrometry.Methods:The samples were extracted by acetonitrile and ethyl acetate and cleaned up.The column was used as chromatography column to separate the synthetic colorant with a gradient elution of the mobile phase.The 28 kinds of synthetic colorant were analyzed in positive and negative mode.The retention time,accurate mass of parent ion and relative isotope abundance were used,while accurate mass of fragment ions was used for confirmation.Results:The linearities were good(R2> 0.99).The limits of detection(LODs) were between 2.5 and 500 μg/kg.The recoveries were in the range of 73.5%-109.2% and the relative standard deviations(RSDs) were 4.9%-10.0%.Conclusion:The method is simple,rapid and reliable,which is suitable for the rapid qualitative screening and quantitative analysis of 28 kinds of synthetic colorant in meat product.
