摘  要:对湖南省不同地区粮仓(金山仓、金牛仓、银光仓)及粮仓不同位置(上层、中层、下层)稻谷霉菌总数、水分含量、脂肪酸值和出糙率进行测定与比较,分析稻谷霉菌与品质变化的差异及相关性。结果表明,不同粮仓及取样层位间稻谷霉菌总数差异显著(P<0.05),银光仓>金山仓>金牛仓,上层>中层>下层。同一粮仓不同取样点位间稻谷霉菌总数差异不显著(P>0.05);金山仓与金牛仓稻谷品质相对较好,银光仓最差;同一粮仓不同层位稻谷水分含量与脂肪酸值均为上层>中层>下层,出糙率为下层>中层>上层,差异显著(P<0.05);同一粮仓不同点位稻谷水分含量、脂肪酸值与出糙率均存在显著性差异(P<0.05)。霉菌总数与水分含量、脂肪酸值、出糙率均有一定相关性,脂肪酸值与水分含量无显著相关性(P>0.05)。The total mold count, moisture contents, fatty acid value and roughness of rice in different regions(Jinshan silo, Jinniu silo, Yinguang silo) of Hunan Province and different positions(upper layer, middle layer, under layer) of silo were determined and compared, and the differences and correlations between mold and quality changes of rice were analyzed. The results showed that there was a significant difference in the total mold count of rice between different silos and sampling layers(P<0.05), Yinguang silo>Jinshan silo>Jinniu silo, upper layer>middle layer>under layer. There was no significant difference in the total mold count of rice between different sampling points in the same silo(P>0.05). The rice quality in the Jinshan silo and Jinniu silo was relatively well, and the Yinguang silo was the worst. The moisture and fatty acid value of rice in different layers of the same silo were both upper layer>middle layer>under layer, but the roughness was under layer>middle layer>upper layer, and the differences were significant(P<0.05).There were significant differences in the moisture, fatty acid value and roughness of rice at different points in the same silo(P<0.05). The total mold count had a certain correlation with moisture, fatty acid value and roughness, and there was no significant correlation between fatty acid value and moisture contents(P>0.05).
