核磁共振指纹谱技术在掺杂食用油检测上的应用

摘　　要：我国是食用油消费大国。食用油的需求量逐年增加,种类及来源渠道日益多样化,食用油产品安全性问题也愈发突出。常见的各种食用油因其组分性质类似,常规方法常常难以实现对食用油进行快速、有效的区分和鉴别。本文中,笔者研发了一种用于食用油品质检测的核磁共振指纹谱方法。该方法通过放大食用油弛豫差异实现了对正常食用油和掺水、猪油、牛油等掺杂食用油及高温处理食用油的区分。通过建立T2分布指纹谱和T1T2相关指纹谱,能够实现对掺杂食用油以及高温处理食用油的检测,使用方便快捷,检测结果具有良好的稳定性和重现性。该方法适用于食用油掺伪掺假的快速检测,同时在食用油生产和销售中油品的控制和检测方面也有很好的应用前景。China is a big edible oil consumer.Because the demand for edible oil is increasing year by year and the types and sources increasingly diversified,the safety of edible oil products is becoming more and more prominent.Different edible oils have similar components and properties,so it is difficult to distinguish different edible oils by the conventional methods.In this study,we developed a magnetic resonance fingerprint spectroscopic method to detect the quality of edible oil.The method could amplify the difference in the nuclear magnetic resonance(NMR)relaxation processes of the edible oils and make a clear distinction among the genuine edible oil,the adulterated edible oils that were mixed with little amount of water,lard,and butter and fried oil.This method could be used to discriminate the adulterated edible oils and fried oil,it was convenient and fast to use by establishing the T2 distribution fingerprint spectrum and T1-T2 correlation fingerprint spectrum.The yielded results had good stability and reproducibility.This method was suitable for the fast inspection of adulterated edible oil,and also had a good application prospect in the control and detection of oil products in the production and sale of edible oil.
