摘  要:2019/20年榨季后期勐捧糖厂采用在初压汁中添加葡聚糖酶的生物技术清除蔗汁中的葡聚糖的试验,葡聚糖酶添加量约8 mg/kg甘蔗(酶活10000 U/mL),结果表明葡聚糖酶能有效清除蔗汁中的葡聚糖,清除率达到89.9%,产品白砂糖中的葡聚糖含量未检出,并且与不加酶的空白试验对比,产糖率提高了0.12个百分点(绝对值),投入产出比达到1∶6。葡聚糖酶是目前糖厂因葡聚糖对制糖生产和产品质量带来诸多不良影响的有效解决方法,并对因葡聚糖造成的糖浆粘度增加使产糖率下降的问题有修复的功效。The experiment of removing dextran from sugarcane juice by adding dextranase to the initial pressure juice was carried out in Mengpeng Sugar Factory in the late period of 2019/20 crushing season.Dextranase was added about 8 mg per kilogram sugarcane(enzyme activity of 10000 U/mL).The results showed that dextranase could effectively remove the dextran in sugarcane juice,clearance rate reached 89.9%,dextran content in white granulated sugar was not detected.Compared with the blank test,sugar yield increased by 0.12%(absolute value),the input-output ratio reached 1∶6.At present,dextranase could effectively eliminate dextran which had adverse effects on sugar production and product quality.Moreover,it could reduce syrup viscosity caused by dextran and improve sugar yield.
