摘  要:植物乳杆菌静息细胞转化苯丙酮酸的主要产物为D-苯基乳酸和L-苯基乳酸。生成的苯基乳酸具有显著的抑制细菌和霉菌生长的活性,对大肠杆菌、金黄色葡萄球菌、扩展青霉和黄曲霉的最小抑菌浓度(MIC)分别为4 mg/mL、4 mg/mL、6 mg/mL和8 mg/mL。在苯基乳酸浓度为0.5 MIC时,能显著延长供试细菌的延迟期、降低细菌数量,并能显著降低供试霉菌孢子萌发率和菌丝生长量,展示出了较强的抑制微生物生长、繁殖的活性。Phenyllactic acid(PLA)could be produced from phenylpyruvate by resting cells of Lactobacillus plantarum.PLA had significant antimicrobial activities against bacteria and moulds,and the minimum inhibitory concentrations(MICs)to Escherichia coli,Staphylococcus aureus,Penicillium expansum and Aspergillus flavus were 4 mg/mL,4 mg/mL,6 mg/mL and 8 mg/mL,respectively.At the concentration of 0.5 MIC,PLA could remarkably prolong the delay period and reduce cell number of the tested bacteria.Besides,PLA also could significantly decrease the spore germinations rate and the hypha biomass of the tested moulds.The results mentioned above indicated that PLA had great ability to inhibit the growth and reproduction of microorganisms.
