摘  要:[目的]对"特医食品"黑木耳桑葚魔芋代餐粉及该产品的主要原料黑木耳粉、桑葚果粉、魔芋精粉多糖的抗氧化性进行比较研究。[方法]通过对4种样品多糖的抗氧化活性测定,比较其活性差异。[结果]黑木耳桑葚魔芋代餐粉多糖的还原力、对DPPH和OH自由基的清除率皆优于黑木耳粉、桑葚果粉、魔芋精粉多糖。[结论]黑木耳桑葚魔芋代餐粉中的多种多糖间有明显的协同增效性,是一种营养功能良好的特医食品。[Objective]The antioxidant activities of mixed polysaccharide from a compound meal powder and the main raw materials of this product were compared.[Method]By measuring the antioxidant activities of four samples of polysaccharides,the differences of the four samples were compared.[Result]The reducing power and the scavenging rate of DPPH and OH radicals of mixed polysaccharide from compound meal powder are better than that of the three raw materials respectively.[Conclusion]The various polysaccharides from raw materials of compound meal powder have obvious synergism,the product is a kind of good FSMP food.
