摘 要:文章主要通过分析微胶囊化姜黄素微粒的松紧密度、水分活度、加速稳定性、水分散液的粒径及其稳定性评价、粒度分布等,对姜黄素微粒及其应用进行评价研究。研究得出:姜黄素微粒的松紧密度比较稳定,松密度在0.6~0.7g/cm3之间,紧密度在0.7~0.8g/cm3之间;水分活度小于0.60,不易滋生微生物;通过对微胶囊化姜黄素微粒稳定性评价得出,经过微胶囊包埋后,姜黄素得到有效的保护,稳定性好;姜黄素微粒水分散液的平均粒径为346.9nm,达纳米级,更容易吸收利用和有效着色;姜黄素微粒水分散液的稳定性好,保持4周无挂壁、无沉淀;姜黄素微粒的粒度分布比较集中,其粒度主要分布在30~80目之间,便于应用时混合均匀。The microencapsulated curcumin beadlet and its applition were discussed in this study by evaluating the bulk density and compact density,water activity,accelerated stability,particle size distribution and its stability of the aqueous solution,the beadlet particle distribution.The bulk density and compact density of the curcumin beadlet are stable,the bulk density is 0.6~0.7g/cm3,and the compact density is 0.7~0.8g/cm3.The water actibity is under 0.60 so that the microorganism is not easy to breed.The quality of the curcumin beadlet is stable for microencapsulating.The average size of the aqueous solution is 346.9nm,which is beneficial to its application of absorbing and coloring.The quality of the aqueous solution is not hanging wall and sediment for four weeks.The particle distribution of the curcumin beadlet is 30~80 mesh,which is facilitated to mix well.
