摘  要:试验以普通毛茶、红毛茶为原料,加入不同水质的水制备茯砖茶,并对其冠突散囊菌数量及感官品质进行了研究。结果表明,用不加茶梗、茶末、改制茶的纯毛茶和红毛茶加工的茯砖茶中冠突散囊菌数量可达2.1×106 CFU/g以上,远高于国家标准要求;用武都汉王绸子坝井水加工的茯砖茶中冠突散囊菌数量显著高于其他处理。该试验首次采用红毛茶加武都汉王绸子坝井水(pH值8.1)制备茯砖茶,发花茂盛、菌花香显、冠突散囊菌数量高,可为丰富陇南茯砖茶种类,开发新产品提供一定的参考依据。This research used black crudely tea to investigate the changes of Eurotium cristatums in Fuzhuan brick-tea with water of different quality.The results show that the quantity of Eurotium cristatums in Fuzhuan brick-tea that without tea stalks and powders could reach 2.1×106 CFU/g,which was much higher than the national standard.The quantity of Eurotium cristatums in Fuzhuan brick-tea processed by water from Hanwangchouziba was the highest.Among different kinds of tea,the Fuzhuan brick-tea made by black crudely tea and water from Hanwangchouziba have the best quality,which provided a certain reference basis for developing new products.
