10个品种柞蚕幼虫的营养成分及氨基酸组成分析

摘　　要：[目的]评价10个品种柞蚕幼虫的营养价值。[方法]取柞蚕5龄幼虫,依据相关国标方法测定柞蚕幼虫的营养成分。[结果]10种柞蚕幼虫的粗蛋白含量为7.34%~12.53%,均含有人体所需的18种氨基酸,氨基酸总含量为5.17%~11.47%,其中8种人体必需氨基酸总含量为1.95%~3.92%,必需氨基酸指数(EAAI)为65.13~132.05。10种柞蚕幼虫均含有多种人体不可缺少的矿物质元素和维生素。[结论]不同柞蚕幼虫品种营养成分含量存在较大差异,可依据不同营养构成及含量,筛选合适的食品源,以满足人们不同的营养需求。[Objective]To evaluate the nutritional value of 10 Antheraeae pemyi larvae varieties.[Method]Fifth instar larvae of Antheraeae pemyi were collected and their nutritional components were determined according to relevant national standards.[Result]The crude protein content of 10 Antheraea pemyi larvae ranged from 7.34%to 12.53%.All of them contain 18 kinds of amino acids needed by human body.The total content of amino acids was 5.17%-11.47%.The total content of eight kinds of essential amino acids was 1.95%-3.92%.The essential amino acid index(EAAI)was 65.13-132.05.Ten Antheraeae pemyi larvae contained many mineral elements and vitamins which were indispensable to human body.[Conclusion]Different Antheraeae pemyi larvae varieties have large differences in nutrient content.According to different nutrient composition and content,suitable food sources can be screened to meet people’s different nutritional needs.
